Located in a prime central spot—right outside the train station and at the start of the shopping district—the square serves as a gathering place to showcase the work of local producers. A total of 87 companies and 5 protection consortia will be the stars of this food and wine journey\, creating a rich mosaic of flavors: from the DOC wines of the Terre di Pisa to extra virgin olive oil\, as well as cheeses\, cured meats\, craft beers\, truffles\, and traditional pastas. \nBaked Goods Take Center Stage\nAmong the highlights are the “Le mani in pasta” masterclasses led by Antonio Pio Campanella\, the World Champion of Contemporary Neapolitan Pizza. The exploration of leavened products continues with the conference “From Grain to Bread\,” sponsored by CNA and the Chamber of Commerce in collaboration with the Department of Agriculture at the University of Pisa and the Association of Urban Agricultural Bakers. Moderated by journalist Luca Martinelli\, the event will delve into the value of breadmaking from field to table.
