Rome – Parmigiano Reggiano and Wines of Valpolicella stand the test of time

Parmigiano Reggiano and Valpolicella Wines to the test of time: Time, we know, brings advice. But how do these two iconic excellences of Italian agribusiness evolve?
We will find out in the company of Adua Villa, sommelier, popularizer and wine writer, and Alessandro Stocchi, taster and expert “beater.” Analyzing different styles of production, they will try in each workshop five labels paired with three different seasonings.
The fruit of unique territories and ancient knowledge, Parmigiano Reggiano and the wines of Valpolicella will thus become the protagonists of a tasting journey to enhance flavors, identities and production methods. Two workshops aimed at industry professionals and the trade press will offer the opportunity to discover these Italian excellences and their distinctive characteristics up close. This will be followed by a walk-around tasting with Valpolicella wines and Parmigiano Reggiano also open to the public.
The event is part of D’OPERA – Quality Heritage of Europe, a three-year-long European narrative celebrating and enhancing these two Italian PDOs.

- 11:30 a.m. –Workshop of five labels of Consorzio Tutela Vini Valpolicella paired with three maturations of Parmigiano Reggiano and a dish developed by Signorvino’s kitchen. Conducted by Adua Villa and Alessandro Stocchi
