Ein Prosit 2026: Udine, Capital of International Gastronomy,October 14–18, 2026

From October 14 to 18, Ein Prositreturns to Udine for its 27th edition, featuring over 90 chefs from around the world and more than 130 events dedicated to contemporary gastronomy.

Five days of collaborative dinners, guided tastings, workshops, food trucks, and special events that bring together culinary cultures, leading professionals, and young talents, while showcasing the finest offerings of Friuli-Venezia Giulia.

The event kicks off on Wednesday, October 14, at the Fucine Brasserie in Buttrio with “In the Holy Name of Fire: A Very Italian Tribute to Bittor Arguinzoniz from Asador Etxebarri.” Massimiliano Alajmo, Elide Mollo, Tommaso Tonioni, Lorenzo Cogo, Matias Perdomo, and Andrea Tortora will pay tribute to the renowned Basque chef, a master of cooking over an open flame.

From Thursday, October 15, through Sunday, October 18, the collaborative dining series will feature restaurants and venues in Udine and the surrounding area, with unique pairings of Italian and international chefs.

Cuisine will extend beyond restaurants thanks in part to the three food trucks on Via Erasmo Valvason, open Friday through Sunday starting at 11:00 a.m. The Felicetti Food Truck will offer creative takes on Monograno pasta, the Petra Pizza Truck will bring together pizza makers, chefs, and pastry chefs, while the Ein Prosit Food Truck will feature specialties and recipes from cuisines around the world.

This weekend, the “Laboratori dei Sapori”(Taste Workshops) will return, featuring cheese, cured meats, chocolate, fermented foods, wine, beer, and spirits. At Casa Petra, in the Tina Modotti Gallery, six hands-on workshops from “Mani in pasta con Petra!” will also offer participants the chance to delve deeper into the techniques of bread-making, pizza-making, pastry-making, and fresh pasta-making.

The program also includes Special Events: from Peruvian cuisine at World’s Best Pollo with Mitsuharu “Micha” Tsumura to a pastry breakfast curated by Andrea Tortora at Caffè Beltrame, as well as “Brunch Ma Non Troppo” with Chiara Pavan and Giorgia Eugenia Goggi, and an international cuisine event hosted by Casa Zhang.

Ample space will be dedicated to guided tastings, featuring a journey through Burgundy, Champagne, Brunello di Montalcino, Barbaresco, and the great wines of Friuli-Venezia Giulia—particularly those from Collio and Colli Orientali. Rounding out the lineup is contemporary mixology, featuring Italian and international bartenders showcasing classics, experimental creations, fermented drinks, and botanicals.

Curated by Claudio Tognoni, Paolo Vizzari, and Manuela Fissore, Ein Prosit is organized by the Tarvisio, Sella Nevea, and Passo Pramollo Tourism Promotion Consortium, with the support of local institutions and partners. The event thus reaffirms its international character, making Udine a meeting place for local cuisine, culture, and identity.
