Eataly – Author’s Dinner: Kitchens in Evolution. January 29, 2026a gourmet evening with chef Matteo Faenza and pastry chef Lorenzo Spavone

Eataly Roma is celebrating a special moment in its gastronomic season with “Cena d’autore – Kitchens in Evolution,” a high-profile dinner to be held on the evening of Jan. 29, 2026 at the refined Terra Restaurant inside the historic Eataly Ostiense location. The event is part of a full calendar of events accompanyingEataly Fest, the week-long celebration of Eataly’s 19th birthday, from Jan. 26 to Feb. 1, with tastings, meetings and surprises dedicated to fans of good food and signature cuisine.

The evening features two talents of the contemporary culinary scene: chef Matteo Faenza, who has just been awarded the Best Emerging Chef 2025 prize, and pastry chef Lorenzo Spavone, known for his experience in the pastry department of the Acquolina restaurant (2 Michelin stars) and current Sous Chef at W Rome. Faenza offers cuisine in which modern technique and contemporary sensibility are intertwined through characterful ingredients, studied contrasts and oriental influences, with a strong focus on the vegetable component. Spavone, with his rigorous and aesthetic approach, signs a dessert that reflects seasonality and harmony of flavors, where sweetness and acidity dialogue to leave an elegant and memorable impression on the palate.

The dinner, presented by food and wine journalist Belinda Bortolan, offers a true sensory journey, pairing each course with wines selected by Marco Carpineti winery.

The menu includes:

  • Appetizer – Cardoncelli mushrooms, almonds, spinach and pumpkin seeds
    Pairing: KIUS Brut (Marco Carpineti)
  • First course – Tortelli stuffed with English cheese and red onion broth
    Pairing: Moro (Marco Carpineti)
  • Main course – Beer-braised beef breast with ponzu sauce and scallions
    Pairing: CAPOLEMOLE Rosso (Marco Carpineti)
  • Sweet – Vanilla mousse sphere with lemon heart, meringue and toasted almonds
    Pairing: LUDUM (Marco Carpineti)

The dinner is designed for an audience of gourmet enthusiasts and those curious about signature cuisine, offering a complete gastronomic experience in an elegant and convivial setting.
