Evoluzione Olio 2026 – Rome, the big day dedicated to quality extra virgin olive oil

On Monday, January 19, 2026, in the heart of EUR in Rome, Evoluzione Olio, the national event celebratingquality extra virgin olive oil, returns. The aim is to explore its potential not only as a food product, but as a cultural, nutritional and gastronomic element. The event – now in its eighth edition – takes place at the prestigious Salone delle Fontane. It represents one of the most important moments for producers, Ho.Re.Ca. operators, industry professionals, specialized press and fans of Italian extra virgin olive oil.

The organization of the event

Evoluzione Olio is a project to enhance and promote quality extra-virgin olive oil conceived by Oleonauta and La Pecora Nera Editore. It was born from the idea of creating a meeting point and comparison between all the actors of the Italian olive and gastronomic supply chain.

The day is structured into several complementary activities. Planned are free tastings at company counters, educational meetings, conferences and talks addressing key issues such as health, use in cooking, oil culture, tourism and communication. An integral part of the experience is the presentation of the Evolving Oils Guide 2026. It is a reference tool for restaurateurs, buyers, sommeliers and quality-conscious consumers. It collects the best Italian productions and the most virtuous realities of the national oil scene.

During the morning, selected producers will present their new productions. Operators will be able to taste and compare different extra virgin olive oils, each with distinctive organoleptic and territorial characteristics. Conferences and panel discussions follow, including insights into the relationship between oil and health, presentations of scientific research on the benefits of polyphenols, and discussions on the role of oil in contemporary cuisine.

A central element of the program is also the presentation of the Evoluzione 2026 Awards. The special awards are given to operators, restaurants, pizzerias, and ice cream parlors that have distinguished themselves for enhancing the value of extra virgin olive oil in their work and in their territory. The artistic plaques are made by artist Yuriko Damiani.
