Severino Garofano. who left us in October 2018, was the winemaker who created the greatest Apulian wines in recent decades, so much so that it can be said without fear of contradiction that Apulian winemaking history is divided between before and after him. In his “retirement” years he had devoted himself to his own winery in Salento, in Copertino, where his children Stefano and Renata, who had joined him in running it, carry on his work. Needless to say, Negroamaro dominates, with often exciting results.
