Thirty years after its founding, Garofano Vigneti e Cantine celebrates its journey with Bianca dei Censi, the winery’s first Fiano. A wine that marks a new phase for the historic Copertino-based company, between continuity with Severino Garofano’s legacy and a future-oriented vision carried forward by his children Stefano and Renata.

Thirty years after its birth, Garofano Vigneti e Cantine celebrates its journey by looking ahead. It does so with Bianca dei Censi, the first Fiano produced by the winery, a symbol of a new phase that combines memory, territory and contemporary vision.

Thirty years in the sign of Salento

Born in Copertino in 1995 from the vision of winemaker Severino Garofano, the winery has played a central role in the development of Negroamaro and the qualitative growth of Apulian viticulture. Today, the second generation is picking up this legacy: Stefano and Renata Garofano continue the family’s work with a keen eye on the evolution of the market, while maintaining strong ties to the Salento area.

Bianca dei Censi, the winery’s first white wine

The arrival of Fiano represents a significant novelty for the winery, traditionally identified with reds and rosés from Negroamaro. Bianca dei Censi is the result of experimentation that has shown the varietal’s remarkable adaptability to the clay soils and windy climate of Salento.

Originating in Campania, the Fiano also creates an ideal link with the Irpinian roots of Severino Garofano, becoming a bridge between past and present. The name of the wine recalls the ancient medieval annuities, the ” ad censum“, often paid in wine, a precious commodity and symbol of wealth.

Negroamaro remains protagonist

The opening to whites does not change the winery’s identity. In fact, Negroamaro continues to occupy a central role through labels such as
Girofle, Eloquenzia, Simpotica and Le Braci, interpreters of the different expressions of Salento. Bianca dei Censi thus expands the company’s narrative without interrupting the path built over the years.

New image, same identity

The 30th anniversary also coincides with a renewal of the corporate image. The new labels reinterpret the carnation symbol through colors inspired by the Salento region, underscoring a path of growth and transformation that looks to the future without giving up its roots.

For Stefano and Renata Garofano, the milestone of these 30 years represents above all a
moment of reflection on the journey they have accomplished. Guarding the legacy received means keeping alive the values that have guided the company, adapting them to a changing environment.

“Consumers, markets and communication languages change. That is why we believe it is fundamental to evolve without losing one’s soul, they explain.

This vision also gave rise to the project dedicated to Fiano: the desire to explore new expressive possibilities of the Salento territory, looking for a white capable of combining freshness, sapidity and elegance.
