Roulade flavoured with ham and plums

In questi involtini c’è l’incontro tra due prodotti europei (italiano e francese) a denominazione. Ci abbiniamo il Terre Siciliane Rosso del Soprano 2017 Palari.

Ingredients for 2 persons:

6 thin slices of beef, 6 slices of Carpegna PDO ham, semi-mature cheese to taste, flour to taste, white wine, 6 pitted Agen IGP prunes, extra virgin olive oil, salt and black pepper, 1 clove of garlic, 6 sage leaves

Procedure:

Take the slices of beef and season them with salt and pepper. Add a sage leaf to each one, then a slice of prosciutto, the cheese shavings, and finally the finely chopped prune.

Roll them up to form rolls and dust the outer part with flour. Close with a toothpick.

In a pan with a drizzle of oil and garlic, brown the rolls well and deglaze with white wine.

Enjoy while still warm, until the cheese is melted.

Terre Siciliane Rosso del Soprano 2017 Palari

Live garnet. Seductive, spicy, and aromatic nose, with enveloping notes of pomegranate and blood orange, cassis, and hints of wood. Savory, tense and lively on the palate, elegant and composed with a long, spicy finish.

Production area: old vineyards located in Santo Stefano Briga, one kilometer as the crow flies from the sea, overlooking the Strait of Messina. Volcanic, sandy soil, rich in minerals, altitude of 600 meters, very steep slopes.

Grape Varieties: 60% Nerello Mascalese, 20% Nerello Cappuccio, 20% Nocera and Galatena, alberello grown.

Harvest: late September, early October.

Vinification: fermentation with indigenous yeasts at controlled temperature in stainless steel tanks and aging for 18 months in second-use barriques.

Alcohol content: 13,5%

Serving temperature: 16-18°C

Recommended pairings: tagliatelle with meat sauce, lightly cooked red meats, aged cheeses.
