In this column we report the month's new openings of restaurants and wine bars throughout Italy. These are not reviews, but previews of newly opened or opening establishments. An observatory on the ferment of the sector, including gastronomic novelties and new drinking addresses.
Here are June's new openings.

Despite the difficulties the restaurant industry continues to face, especially on the staffing front, the Italian scene remains vibrant, with numerous new openings ranging from gourmet restaurants to trattorias, from pizzerias to ethnic eateries.

The price range is also wide: ranging from more accessible proposals related to traditional cuisine and pizza to high-end restaurants, often placed in luxury hotel settings. The success of a restaurant depends on many factors: from the experience of the person who leads it to the quality of the cuisine and the professionalism of the chef; from the location to the wine list (an element, the latter, always central for us). Only the public will tell who has hit the mark.

BoardVitto is born in Mestre: new forge of taste between tradition and cooking classes

A food and wine store with revisited typical cuisine, workshop and workshops opens in the heart of the city. Partners include Fabio Cavallarin, owner of Osteria alla Torre, Stefano Callegaro, a well-known chef, and Riccardo Riato. They combine experience, renowned cuisine and world events and haute cuisine to revive conviviality in Calle del Sale. The three owners, “The restaurant is designed to respond to the pace of contemporary life without sacrificing quality.”

Inside is a small niche market and high-level gastronomy, supported by a curated selection of wines and beers. However, the real innovation of “Vitto” lies in its event area and educational vocation. The restaurant does not want to be just a point of sale, but a real experiential school. In fact, cycles of cooking classes open to enthusiasts who wish to learn the secrets of tradition revised by a great chef will be organized.

San Carlo Bistrot VezzeFrom New York to the Marina of Varazze: San Carlo Bistrot opens.

From Vitello Tonnato and Piedmontese Fassona beef to Ricciola Carpaccio. To Agnolotti del Plin and Tajarin with yellow and red dates to Sea Bass Fillet and Scalded Calamari. Firm and no-frills flavors to unite in a harmony of sea and land two regions as close not only geographically as Liguria and Piedmont. This is the bet of the  San Carlo Bistrot, the brand new restaurant that Saturday, June 13 will open its doors in the magnificent setting of the Marina di Varazze.

San Carlo Bistrot will be open 7 days a week from breakfast to dinner (hours: Sunday-Thursday 7-24; Friday-Saturday Fri-Sat 7 – 01) and will guarantee 90 covers counting the outdoor area. Its crew will consist, at least initially, of 10 professionals including wait staff and kitchen staff. Along with the gastronomic proposal, San Carlo Bistrot will also boast a wine cellar with more than 30 labels from Piedmont and Liguria with some goodies from other regions and international.
