In this column we report the month's new openings of restaurants and wine bars throughout Italy. These are not reviews, but previews of newly opened or opening establishments. An observatory on the ferment of the sector, including gastronomic novelties and new drinking addresses.
Here are June's new openings.

Despite the difficulties the restaurant industry continues to face, especially on the staffing front, the Italian scene remains vibrant, with numerous new openings ranging from gourmet restaurants to trattorias, from pizzerias to ethnic eateries.

The price range is also wide: ranging from more accessible proposals related to traditional cuisine and pizza to high-end restaurants, often placed in luxury hotel settings. The success of a restaurant depends on many factors: from the experience of the person who leads it to the quality of the cuisine and the professionalism of the chef; from the location to the wine list (an element, the latter, always central for us). Only the public will tell who has hit the mark.

Esterina in CivitavecchiaEsterina is reborn by the sea. Anastasia Paris signs the new chapter of the historic Civitavecchia restaurant.

It opened on June 8, 2026. A project that reinterprets local tradition with contemporary technique and a new vision of seafood cuisine. There are two female figures accompanying the path of Anastasia Paris today. The first is Futura, the restaurant opened in 2025 in Rome’s Rione Monti, her solo debut; the second is Esterina, a historic address overlooking the sea in Civitavecchia that the young and talented chef from Abruzzo, class of ’94, is preparing to bring back to life with new life. Two women’s names, two different identities but deeply connected by the same vision.

Esterina stands at the entrance to south Civitavecchia, in a location that is also easily accessible from Rome and the Latium coast. The facility is spread over two levels. On the upper level is the main hall, completely overlooking the sea. While the lower level houses a space dedicated to a more informal enjoyment. The gastronomic proposal is built around a contemporary reading of Civitavecchia’s catch, which arrives daily from the port and becomes an immediate and layered matter.

Duilio in OstiaOstia Duilio inaugurates in Ostia

In Ostia, Cristiano Giacometti‘s new project. From breakfast to after dinner, a place where cuisine, relationships and community coexist naturally. Duilio was born out of the belief that hospitality today can play a broader role than just administration. For this gastronomic offerings are complemented by free cultural, educational and creative activities, with the aim of generating value for the neighborhood and giving people back a space to live freely.

The inspiration is that of an imaginary house, built like a movie set composed of different rooms that evoke shared memories. The dining room, the living room with the large television, the spaces of domestic conviviality. Gastronomic proposal is entrusted to chefs Davide Carmina and Emanuele Ali, already protagonists in the kitchen of Il Capanno. From breakfast to after dinner, Duilio accompanies guests throughout the day with a gastronomic proposal designed to be accessible, familiar and shared.

Vietnom RomeVIÊTNÒM doubles in Rome: authentic Vietnamese street food at Mercato Trionfale

After the success of its first address at Mercato Nomentano, VIÊTNÒM opens a new location in Rome, at Mercato Trionfale. The Vietnamese street food format founded by Gabriele Raimondi presents itself in a larger space. Designed to welcome customers eager to sit down and fully enjoy the dining experience.

The heart of VIÊTNÒM remains the cuisine. Fresh, light, aromatic dishes that are true to Vietnamese tradition. Highlights include Banh Mi, semi-baguette sandwiches with protein and vegetables in vinegar. Pho, a typical soup with rice noodles. Goi Cuon, fresh rolls. The Còm Chien, sautéed rice with tamarind sauce, and the Gà Cà Ri, Vietnamese chicken curry with coconut milk and lemongrass.

Santini Roman PizzeriaFrom Velletri to Rome: the conscious pizza of Santini Pizzeria Romana

From the Roman countryside to Appio Latino comes Santini Pizzeria Romana . The project of Gabriele Santini, a 24-year-old young entrepreneur with roots in a family of restaurateurs active for four generations in Velletri. After earning a degree in food and wine tourism from Tor Vergata in 2024, Gabriele brings his vision of conscious pizza to the capital. He combines tradition, territory and attention to the production chain.

Santini Pizzeria Romana then opens on Francesco Valesio Street in the Appio Latino neighborhood. Opposite the Alberone district market, where many stalls come from Velletri, an area historically devoted to agriculture. The setting recalls classic dining, double fork and knife and cloth napkins. The team is young, with members under 25, and the restaurant seats 120 indoors, with a dehors operating from May to September.

Flor de Maga RomeFlor de Maga: tropical-style Botanical Cocktail Bar opens in a nursery in Rome

A project born in the alleys of Trastevere to bring a cosmopolitan and tropical atmosphere to Marconi as well. Three friends, three businesses joining forces to give life to a temporary summer cocktail bar inside a nursery: the result is Flor de Maga, the new botanical cocktail bar, which is a candidate to become the Roman place to be of the spring/summer 2026 season. A cocktail bar nestled in a green oasis, where the neighborhood finds itself in worlds away, without moving from the city, among plants, music and an atmosphere you won’t forget.

Even the name, Flor de Maga, is inspired by the national flower of Puerto Rico, a common passion of the three friends behind this project. Marco Pelliccia, a third-generation member of a family that lives green as a legacy and a language, is the owner of Fleur Garden nursery, whose historic headquarters is on Viale Trastevere and which recently renovated its second space in the Marconi area. It is here that he invited his two friends from the nightlife world, Elisa Bonafede of Niji and Daniele Fadda of Santo Trastevere (as well as author of the gin Spirito Santo), to build together this new format that combines greenery and hospitality.

Clove by Amalia CostantiniClove by Amalia Costantini: the espresso clove that changes street food in Rome

A new format signed by Amalia Costantini, among the most recognized figures in contemporary Italian pizza, is born in the Prati district. Open since mid-May at 229 Via dei Gracchi, Clove brings to the Capital a new idea of urban signature pizza: an espresso slice, freshly prepared and served hot, designed for quick consumption but built with the same technical and qualitative attention as contemporary haute pizza.

Basis of the project is the work Amalia Costantini has been carrying out for more than a decade on mother yeast and long fermentations. The doughs are made with live mother yeast, semi-integral flours and selected ancient grains, to achieve lightness, aromatic complexity and high digestibility. The restaurant is developed as an essential and dynamic urban space, with a few seats and a digital ordering system via screens that identify the offerings by numbers, rather than traditional names. Offerings include about ten savory wedges, three desserts and a selection of fried express.

Ferrara GroceryDrogheria Ferrara opens in Rome

Opened in the capital, a stone’s throw from the Coppedè neighborhood, a store that focuses on the idea of the pantry with more than 50 spices, 26 types of peppers and many delicacies sold by weight to rediscover the pleasure of daily cooking without waste.

BoardVitto is born in Mestre: new forge of taste between tradition and cooking classes

A food and wine store with revisited typical cuisine, workshop and workshops opens in the heart of the city. Partners include Fabio Cavallarin, owner of Osteria alla Torre, Stefano Callegaro, a well-known chef, and Riccardo Riato. They combine experience, renowned cuisine and world events and haute cuisine to revive conviviality in Calle del Sale. The three owners, “The restaurant is designed to respond to the pace of contemporary life without sacrificing quality.”

Inside is a small niche market and high-level gastronomy, supported by a curated selection of wines and beers. However, the real innovation of “Vitto” lies in its event area and educational vocation. The restaurant does not want to be just a point of sale, but a real experiential school. In fact, cycles of cooking classes open to enthusiasts who wish to learn the secrets of tradition revised by a great chef will be organized.

San Carlo Bistrot VezzeFrom New York to the Marina of Varazze: San Carlo Bistrot opens.

Vitello Tonnato and Piedmontese Fassona beef to Carpaccio of Ricciola. Agnolotti del Plin and Tajarin with yellow and red dates to Sea Bass Fillet and Scalded Calamari. Firm, no-frills flavors to unite in a harmony of sea and land two regions as close not only geographically as Liguria and Piedmont. This is the bet of San Carlo Bistrot, the brand new restaurant that will open its doors on Saturday, June 13, in the magnificent setting of Marina di Varazze.

San Carlo Bistrot will be open 7 days a week from breakfast to dinner (hours: Sunday-Thursday 7-24; Friday-Saturday Fri-Sat 7 – 01) and will guarantee 90 covers counting the outdoor area. Its crew will consist, at least initially, of 10 professionals including wait staff and kitchen staff. Along with the gastronomic proposal, San Carlo Bistrot will also boast a wine cellar with more than 30 labels from Piedmont and Liguria with some goodies from other regions and international.
