In this column we report on the new June openings of restaurants and wine bars being opened up and down the peninsula. These are, it should be pointed out, reports and not reviews, as none of us have yet had the opportunity to eat at that particular upcoming establishment.

Despite the undeniable crisis in the restaurant industry regarding wait staff and kitchen staff, there remains a great ferment evident in the number of new restaurant openings. Various types are embraced, from gourmet restaurant to trattoria, from pizzeria to ethnic restaurant.

Wide is the price range related to new restaurants, ranging from the cheaper ones, set on traditional cuisine and pizza, to the decidedly higher-end ones, perhaps inside luxury hotels.

Often the guarantee of the quality of the restaurant is the experience of the owner, often the reliability of the chef, often the skills of the manager. But many other factors come into play in determining the success of a restaurant, from location to decor, from parking facilities to the wine list (something we value).

Here’s a chance for you to try new experiences.

Anna at 20 RomeIn Trieste district comes AnnA at 20, Bolognese tradition meets Rome and Japan

Where Rome meets Bologna” is the claim chosen by Anna al 20, an address opened last May 7 in the Trieste neighborhood on Via Brescia (corner of Via Cesare Bosi), to tell the restaurant’s focus from the start. Here the Bolognese tradition is the great protagonist, but at the same time it welcomes Roman and even Japanese contaminations. A Bolognese 2.0, as the partners define it: the entrepreneurial couple Annalisa Polo and Roberto Tomasini (with already several establishments under their belt, such as Casa Carmen and Fatto in Casa By La Danesina) and chef Mattia D’Ambrosio, 28, who was born and raised right in Bologna before he began traveling around Europe training in top kitchens. For three years at David Munoz’s three-starred Diverxo in Madrid, where he was Junior Sous Chef, and then among the creators of the Cantera project, which boasts several establishments in Italy and Europe. A background that allowed him to develop a marked creativity, constantly coming up with new ideas that went on to form Anna’s first menu at 20.

Anna at 20 is a small and intimate venue, just 32 seats inside, plus about 20 outside (which will become 40 in the coming months with the arrival of a new platform). The name chosen? “It’s short, it sticks, it’s reassuring, it’s reminiscent of home,” the partners explain. “It’s present in almost every household in Italy and around the world. And, coincidentally, it is the name of the chef’s mother.

Domenico Ciotti brings the authentic taste of the inland region of Abruzzo to the heart of the Milanese city.

L’Orsetto D’Abruzzo descends from the slopes of Gran Sasso and prepares to invade the Milanese metropolis. It opens a new restaurant that brings to the Lombard capital the authentic flavors of the Central Italian region, particularly its hinterland. Located at 10 Via Valtellina, in the heart of the new Farini district, it bears the signature of Domenico Ciotti, owner of the Bologna restaurant of the same name, who aims to present Abruzzo as a true philosophy of life of which he is an ambassador. What makes the difference is theconvivial and informalatmosphere in which to enjoy one of the dishes on the menu, prepared with dedication and passion just like at home. The concept is summarized in the claim “sincere cuisine with real km” and reflects a culinary philosophy based on the authenticity and quality of the raw materials, which, from appetizers to desserts, including wines and bitters, all come from local Abruzzo retailers.

NautilusNautilus opens in Milan, the return of a true Trattoria di Mare

The pleasure of being at the table, the authenticity of the Mediterranean and iconic taste of Italian cuisine, the beauty of simplicity, these are the firm foundations on which Nautilus Trattoria di Mare rests. The name is a true homage to the 1980s, when the reference to novels and legends such as Captain Nemo in “Twenty Thousand Leagues Under the Sea” was almost inescapable. A link to that magical era also resurfaces in a section of the menu where the shrimp cocktail in the glass bowl, penne with salmon and vodka, and sole a la mugnaia are towering.

The cuisine is genuine, wanting to enhance the fish, the main ingredient, without forcing and excessive processing that can then shipwreck in different flavors. A rediscovery of traditional dishes with fresh pastas, seafood risotto, the catch of the day and the irresistible fried fish, to which are added plateaus of raw fish and oysters.

This is what Giulio Dallari and Claudia Lesti, owners of Sponda, the new sign born in the spaces of Deriva Aniene, propose. The restaurant, open every evening from aperitif time, a wine list made up of small realities, a cocktail list that focuses on the great classics, draft beers, craft beers and to accompany the drink, a food offer designed and curated by Matteo Militello, consultant chef who has designed a menu that fully represents the soul of the restaurant.

Four years after opening, the sign owned by entrepreneurial couple Annalisa Polo and Roberto Tomasini opens its second location and expands its offerings: fish, meat, and vegetables, combining traditional Italian flavors with Spanish and Mexican ones, as well as a sustainable drink list that exalts the sea

In Fiumicino, the proposal becomes broader, not only fish, but also meat and vegetables. The brigade is led byExecutive Chef Antonio Rossetti, class of ’84, who also runs the restaurant in Fregene. A native of Salento, he followed a different path for a long time, but the passion for cooking handed down to him by his family made itself felt: thus began many experiences among restaurants and hotels in the Capital to lay a solid foundation of traditional Roman cuisine. A first step that, combined with the many travels and the desire to experiment, gives birth to a proposal rich in contaminations that finds its perfect implementation at Casa Carmen.

Chefs Andreoni and MazzolaNew restaurant at Le Torri Center in Villa Vogel

Florence, opened the first restaurant run by guests and volunteers of Caritas Foundation. It is located at Le Torri Center in Villa Vogel: volunteers, renowned chefs and guests of the Foundation’s facilities work here.

The space, where you can enjoy pizzas, burgers, pasta dishes and street food, is open to everyone from Thursday to Sunday. The menu is prepared by chef Gabriele Andreoni together with longtime Foundation chef Carlo Mazzola. In the kitchen and in the dining room they are helped by volunteers and people who benefit from the services of the Florentine Caritas Solidarity Foundation’s facilities: minors from reception centers, students from hotel schools who already with their teachers collaborate with the city canteens, pensioners, girls who are following their community service and social volunteer year at Caritas of Florence, and young people with disabilities. The idea is to entrust the preparation of bread and schiacciate, once the green light from the judicial authority is obtained, to a former baker who is a beneficiary of the alternative measures to detention, accepted at the Foundation’s Il Samaritano house.

The new “marine” restaurant conceived by Fabio Spada can count on a team with a wealth of experience: top-notch raw material, easy-to-understand dishes and informal but always attentive service.

At the helm of the kitchen is Emiliano Valenti, who boasts a long resume in Roman restaurants that began with training at Convivio Troiani, followed by more than 10 years spent at Settembrini, then comes experience at Romeo’s. At Emilio’s we find a varied offer of fish, which also comes from the various auctions of the Lazio coast, always respecting daily availability and seasonality. The menu, therefore, changes often and every two to three days a series of off-paper specials are offered .

Berberé BolognaA new Berberè pizzeria in Bologna

The brand’s fourth Bologna pizzeria, designed and built to be its “Mother House,” officially opened on May 30, 2024 on Via Murri.

It was 2010 when Berberè first introduced itself with the opening of its first pizzeria on the outskirts of the city of Bologna (Castel Maggiore). Today, fourteen years later, Berberè opens its fourth pizzeria in its hometown. The large spaces of the new address – at 71 Via Murri, in the premises previously occupied by Fourghetti, – will accommodate as many as 70 indoor seats in addition to 60 in the spacious outdoor dehors. The pizzeria will be open daily with the proposal now known and appreciated by customers: organic and stone-ground flours, doughs fermented with only live sourdough for 24 hours, seasonal garnishes and pizzas served in 8 slices to share.

Between Piazza della Repubblica and Viale Gramsci, across the street from the American Consulate, in an elegant early 20th-century building, the new 50 Kalò seats about 70 people under large yellow tufa vaults, brought to life. The pizza menu at the new 50 Kalò features Ciro Salvo’s great classics: from his super award-winning Margherita, scented with San Marzano and basil, to the famous Pizza e Patate, via the Marinara 50 Kalò and vegetable pizzas. Special attention is given to the wine service, with a selection of labels that includes a wide range of wines and sparkling wines from Campania and a selection of Champagnes.
