Chef Giorgio Locatelli, as part of the “Water in Our Hands” project, offers a typical dish from the Roman culinary tradition. We pair it with Alto Adige Pinot Grigio Riserva Giatl 2022 Peter Zemmer.
Ingredients for 2 persons:
1 medium head of Romanesco cabbage; 1 carrot, 1 onion, 1 stick of celery finely chopped; 1 tablespoon tomato paste; 1 clove of garlic lightly crushed; 150 g cooked skate; 800 ml skate broth; 2 slices white bread; 1 tablespoon chopped parsley; 2 tablespoons extra virgin olive oil; Salt and pepper to taste
Directions:
In a saucepan, add some of the oil, vegetables, and garlic and sauté for a couple of minutes.
Then remove the garlic, add the tomato paste, Romanesco cabbage, and season for another 2 minutes.
Season with salt and pepper and add one-third of the breed stock until the cabbage is covered. Bring to a simmer and cook gently for 8 to 9 minutes, adding stock if necessary.
Meanwhile, toast the bread and rub it with a clove of garlic and a drop of oil.
Finally, add the fish to the soup, check for salt pepper, and serve garnishing with oil and the previously toasted and seasoned bread.

Alto Adige Pinot Grigio Riserva Giatl 2022 Peter Zemmer
Intense straw yellow color. Fruity with ripe pear, melon and puffs of herbs on the nose. Well-structured sip, balanced and savory, fresh and with great intensity.
Production area: vineyards located in the Giatl area, with vines planted at high density with selected Pinot Grigio clones. Sandy alluvial soils with calcareous gravel from the plain around the town of Cortina on the Wine Road. The favorable microclimate, characterized by ideal irradiation of the area, and the perfect aeration of the berries thanks to the Ora that blows daily, determine the excellent quality of the.
Grape varieties: 100% Pinot Grigio with a final yield of 45 hl/ha.
Production processes: the clusters are poured into the pneumatic press already crushed and destemmed. The grapes are cold macerated before pressing in order to encourage an accentuation of the wine’s fruity aroma. Then they are carefully pressed while the deposits are allowed to settle naturally. Alcoholic fermentation takes place in small and large French oak barrels (12 months) and steel casks (6 months), which give this reserve harmony and longevity. Before putting the wine on the market, a period of additional months of bottle aging is required.

Recommended pairings: appetizers, fish main courses, vegetables and white meats.
