New Openings October 2025 – update

nuove aperture ottobre 2025

In this column we give an account of the month's new restaurant and wine bar openings up and down the peninsula. These are, it should be pointed out, reports and not reviews, as none of us have yet had the opportunity to eat at that particular upcoming establishment. Here follow October's new openings.

Despite the undeniable crisis in the restaurant industry regarding wait staff and kitchen staff, there remains a great ferment evident in the number of new restaurant openings. Various types are embraced, from gourmet restaurant to trattoria, from pizzeria to ethnic restaurant.

Wide is the price range related to new restaurants, ranging from the cheaper ones, set on traditional cuisine and pizza, to the decidedly higher-end ones, perhaps inside luxury hotels.

Often the guarantee of the quality of the restaurant is the experience of the owner, often the reliability of the chef, often the skills of the manager. But many other factors come into play in determining the success of a restaurant, from location to decor, from parking facilities to the wine list (something we value).

Here’s a chance for you to try new experiences.

The article is updated regularly with reports of new openings that we learn about.

Pino Cuttaia Uovo di Seppia outletPino Cuttaia opens an Uovo di Seppia at the Outlet Village in Dittaino

It will only be a matter of a few weeks, by the end of November at the latest. Pino Cuttaia, the bistellated chef of La Madia in Licata in the province of Agrigento is opening Uovo di Seppia inside an Outlet for the first time. And to be precise, the Outlet Village of Dittaino, in the territory of Agira in the province of Enna, along the Palermo-Catania highway, the most important structure of its kind opened in Sicily.

Uovo di Seppia at the Outlet Village joins those opened in Milan and Palermo. And it will finally be a place for discerning gluttons on the busy and ramshackle Palermo-Catania highway. An “off toll booth” that was somehow needed. The brigade in the kitchen will be part of Cuttaia’s extensive team. The Outlet Village opened some 15 years ago and is home to several prestigious fashion brands and is also frequented by many tourists.

Biské RomeBiskè, the taste of hospitality at
Via Nomentana, 1040 in Rome

After 20 years of history, tradition and passion, La Mucca Bischera 2 gets a makeover and becomes
Biskè. A more direct, contemporary and recognizable name that marks a natural evolution of the path begun in 2005 by Giuseppe Todaro and Maria, his wife and life partner, the soul of a cuisine that has always focused on authenticity, hospitality and taste.

Biskè tells of a clear and consistent identity: a place where good food meets the warmth of home, a place where the taste of the most genuine welcome is enjoyed. Pizzeria, braceria, pucceria and Roman cuisine intertwine in an offering that speaks of quality, seasonality and artisanal passion. Every dish is prepared with care, from the high-hydration, long-rising doughs to the grilled Danish meats to the strictly homemade fried foods and desserts.

Rome Garbatella CueStecca: the shared dream of two great chefs comes to life in Garbatella

Stecca, the new space conceived by Flavio De Maio, chef and patron of Flavio al Velavevodetto, opens in Garbatella. And Franco Franciosi, chef and patron of Mammaròssa (Avezzano). Born out of a deep friendship, Stecca aims to be a multisensory workshop. Here taste meets sound, wine dialogues with words, and every experience becomes an opportunity to meet and connect.

Choosing the Roman Garbatella neighborhood was no accident. It is here that Stecca finds its natural location. A neighborhood that makes sociality a founding value and embodies the very idea of sharing, the same from which the project was born. In Stecca, music is not a background, but a language parallel to taste. Able to stimulate sharing, open spaces of discovery and amplify the sensory experience. From this vision comes the idea of a custom-designed sound system, conceived as a real musical instrument. The gastronomic narrative moves on two distinct but complementary tracks: the room and the counter.

In the dining room, the pace is soft and meditative, punctuated by an ever-changing menu of the day. From a fluid menu of about twenty references, designed to accompany the guest on a coherent, harmonious and calibrated path. The dishes on the menu range from 8 to 16 euros for appetizers, 16 to 24 euros for first courses, 18 to 25 euros for main courses, while desserts are between 8 and 12 euros.
