In this column we report the month's new openings of restaurants and wine bars throughout Italy. These are not reviews, but previews of newly opened or opening establishments. An observatory on the ferment of the sector, including gastronomic novelties and new drinking addresses.
Here are January's new openings.

Despite the difficulties the restaurant industry continues to face, especially on the staffing front, the Italian scene remains vibrant, with numerous new openings ranging from gourmet restaurants to trattorias, from pizzerias to ethnic eateries.

The price range is also wide: ranging from more accessible proposals related to traditional cuisine and pizza to high-end restaurants, often placed in luxury hotel settings. The success of a restaurant depends on many factors: from the experience of the person who leads it to the quality of the cuisine and the professionalism of the chef; from the location to the wine list (an element, the latter, always central for us). Only the public will tell who has hit the mark.

But also for Florentines who desire a restaurant capable of entering everyday life and special moments.

Signorvino Rome Largo dei LombardiSignorvino opens a major new venue in the heart of Rome

Signorvino, the restaurant sign with wine bar founded in 2012 by Sandro Veronesi(Oniverse), consolidates its ties with the capital with the opening of its second venue in the center. After the success of the venue in Piazza Barberini, it chooses the beating heart of the historic center by settling inLargo dei Lombardi 8, in a strategic location just a stone’s throw from Via del Corso, 60 seats inside and another 40 located in a visually striking stallatico on thesquare.

Thegastronomic offerings and wine list will follow the line already traced by the Piazza Barberini eatery, maintaining the same balance between quality and price that have made it famous. In addition to cooking and sales, the Largo dei Lombardi outlet will be a vital center of events and outreach. The calendar will include tasting dinners with producers, lifestyle events with DJ sets and wine classes.

Osteria della Parola RomeOsteria della Parola in Prati

It is called Osteria della Parola (Word Osteria) and is the new project of the group of entrepreneurs already at the helm of Caligola Osteria Sincera, a well-established establishment in the neighborhood. The opening is at 52 Via Ennio Quirino Visconti, a few steps from Piazza Cavour, in a space that combines cuisine, Roman pizza and a narrative dimension strongly linked to the theme of words, poetry and language play.

The great classics coexist on the menu. Amatriciana, carbonara, cacio e pepe, alongside an entirely homemade fresh pasta and egg pasta offering. With dishes such as tortello stuffed with cow’s ricotta and fresh truffle, mantecato with butter and 30-month Parmigiano. Or lasagna with beef ragout and fried meatballs. Main courses look to memory cooking: filet with three butters, meatballs with sauce, chicken cacciatore, tagliata.
