In this column we give an account of the month's new restaurant and wine bar openings up and down the peninsula. These are, it should be pointed out, reports and not reviews, as none of us have yet had the opportunity to eat at that particular upcoming establishment. Here are the new openings for December.

Despite the undeniable crisis in the restaurant industry regarding wait staff and kitchen staff, there remains a great ferment evident in the number of new restaurant openings. Various types are embraced, from gourmet restaurant to trattoria, from pizzeria to ethnic restaurant.

Wide is the price range related to new restaurants, ranging from the cheaper ones, set on traditional cuisine and pizza, to the decidedly higher-end ones, perhaps inside luxury hotels.

Often the guarantee of the quality of the restaurant is the experience of the owner, often the reliability of the chef, often the skills of the manager. But many other factors come into play in determining the success of a restaurant, from location to decor, from parking facilities to the wine list (something we value).

Here’s a chance for you to try new experiences.

Spiga, the restaurant signed by Fulvio Pierangelini, debuts at The Carlton, a Rocco Forte hotel. A place of matter, culture and simplicity, as much in the gastronomic proposal as in the space.

piga is an expression of sought-after normality, where Fulvio Pierangelini expresses a free cuisine that is as classic as it is surprising thanks to his interpretation and execution by Chef Luigi Nastri-who joins him now after taking his first steps in the kitchen precisely because of his teachings-and with Cheffe pâtissière Soccorsa Faienza.

Dictated by seasonality, the restaurant’s offerings are constantly evolving for readable dishes that do not flaunt their technical complexity. Overcoming fads, focus on the essence of the products. These include “Mullet and Rib Salad”; “Butternut Squash Tortelli with Parmesan Cheese”. “Green Pepper Swordfish with Mashed Chicory” and “Panettone Soufflé, Mascarpone Cream.” A choice that is also reflected in the mise en place for a timeless table that is at once sophisticated, artisanal and classic. The wine selection ranges in about three hundred labels. Enhancing a path between great Italian and, at times, French producers.

The Wine Room’s tasting menu interprets Italian cuisine with a contemporary look and a strong connection to the province of Vicenza. Here tradition meets research, season becomes narrative and territory is translated into crisp, recognizable flavors.
