In this column we report the month's new openings of restaurants and wine bars throughout Italy. These are not reviews, but previews of newly opened or opening establishments. An observatory on the ferment of the sector, including gastronomic novelties and new drinking addresses.

Despite the difficulties the restaurant industry continues to face, especially on the staffing front, the Italian scene remains vibrant, with numerous new openings ranging from gourmet restaurants to trattorias, from pizzerias to ethnic eateries.
The price range is also wide: ranging from more accessible proposals related to traditional cuisine and pizza to high-end restaurants, often placed in luxury hotel settings. The success of a restaurant depends on many factors: from the experience of the person who leads it to the quality of the cuisine and the professionalism of the chef; from the location to the wine list (an element, the latter, always central for us). Only the public will tell who has hit the mark.

Gastone brings the sea to Florence: fish mashing and great wines
Gastone was born from the meeting between Carmine Vitale and Mattia Petri. Two visions that daily complement each other between kitchen and dining room.
Carmine Vitale’s cuisine stems from absolute respect for the raw material and the desire to enhance its flavor in its most authentic form. An essential approach, also inherited from the family tradition linked to the sea, which results in direct, clean dishes centered on the main ingredient. Alongside Vitale’s work, the project takes shape through Mattia Petri, sommelier, who interprets and narrates the dishes, building the guest’s journey each day, interweaving cuisine, wine and service. The wine list has over 450 labels and is the result of years of research, travel and direct visits to wine territories.

Ciao Cara: the restaurant that chooses tradition is born in Turin
Ciao Cara comes to life in a space that is not just an address, but a memory. Here stood the trattoria of the great-grandparents of Emanuele Borio, today among the founders of the project.
Born in 1994 Emanuele grew up in close contact with the sector, developing a concrete and daily knowledge of catering.
Next to him Anastasia, born in 2000, grew up in a family with over 70 years of experience in the world of flours. Trained between economics and food & wine communication at IULM, with direct experience in organizing gastronomic events. At the reins of the kitchen, Federico Girone, with a path that crosses both fine dining and more traditional cuisine. From La Credenza to Trattoria Zappatori. Today at the helm of a gastronomic proposal that combines technique, memory and research.

Historic pizzeria Bedin reopens since 1862 in Genoa, Italy
Bedin since 1862 does not “open”: it returns. On Thursday, April 23, the historic Genoese sign reopens its doors in Dante Square. A symbolic place of the city’s urban transformation in the 1950s. When Genoa imagined its own modern and vertical future, able for the first time to measure itself against international models. After two years of renovation, the city’s first pizzeria is coming back to life under the leadership of pizzaiolo and chef Andrea Serra. Giving shape to a project that weaves memory, identity and contemporaneity, in the sign of tradition and research.
The gastronomic proposal is deeply rooted in Ligurian tradition. With a strict focus on short supply chain and local products. Ample space is devoted to selected local ingredients. Often “zero centimeter,” from small producers. Among the excellences stands out the meat of cabannina, a native Ligurian breed, protagonist of burgers and tartare. Layla arrives in Rome’s Prati neighborhood
From the fishing boats of Mazara del Vallo to the Prati district: a gourmet gem opens that combines counter-service tastings of Mazara del Vallo red shrimp and scampi, accompanied by top-quality caviar from the Caspian Sea. Layla is also a boutique where you can buy fresh, processed red shrimp and langoustines, packaged in elegant boxes to take home along with caviar, premium oils, selected wines and champagnes
The property owns two fishing boats, Socrates and Cyclamen, which operate in the sea off Mazara del Vallo, one of the Mediterranean’s most important ports for shrimp fishing. The experience revolves around a ten-seat marble counter, designed as a true space for interaction between kitchen and guests. Layla’s menu is built around a few but prized protagonists: red shrimp from Mazara del Vallo, scampi and caviar.
